A composition is one task, written fully, in the language of your entry. A letter still needs an opening and a close.
The idea
The essay paper offers a choice of composition, and the published scheme says you answer one. Read the instruction on your paper. A second composition does not repair a blank comprehension, a blank translation, or a blank language section. Those other parts are compulsory. Spend the time on the one composition you chose, then move on.
Write in the language you were entered for. A story in English does not show that language. A narrative needs a beginning, the events in order, and an ending. A description needs what a person would see, hear or do, not a list of names with no picture. A letter needs a greeting, the message that answers the task, and a close. Open it and close it. If the task is an opinion, state the opinion and give reasons. One task, done fully, is the aim.
The Ghanaian Language tips guide says to write one composition, then finish the compulsory parts. BECE Ghanaian Language tips
What earns the marks
The language of the answer is the first gate. English, except where a translation task asks for it, does not score the composition. Answering every composition spends the time the compulsory parts needed. A letter with no greeting or no close is unfinished. A story that never reaches an ending has not done the task. If the question paper asks for a different number, follow the question paper.
Practice questions

No. Read the instruction. In the published scheme you answer one composition, then you do comprehension, translation, and language and usage. Extra compositions spend the time those parts needed. If your question paper asks for a different number, follow the question paper.
